Giveaway Day

Just in time for all those fresh fruits and vegetables you'll be harvesting in the next few months I'm offering up these cute cloth produce bags. Not growing your own fruits and veges ? Then take them to the grocery store with you and use them in place of those nasty plastic sacks. These produce bags are made from flour sack material so will weigh just a tad, but not as much as the cost of an apple.
For the chance to win this set of 2, just leave me a comment along with your favorite "Green" tip.
This Giveaway is open until mid night on Sunday 31st May 2009. If you're an international reader, don't be shy, this one's for you too.
GOOD LUCK !!

It's been a long time

Poor neglected blog, sadly when things get nuts around here some things have to take a back seat and the last week and a half my friend it had to be you.
All 3 kids had Bronchitis, Victoria and Ben both had sinus infections, Victoria had Strep and then had to get a root canal and Reagan ended up contracting a Staph infection on the back of her neck thanks to a pesky tic and I threw my back out after a weekend of too much lifting. I've spent more time in Dentist and Dr offices and waiting in line at Pharmacies in the last week and a half than I have in the last couple of years.

Once the sickies started on their way out there were Birthdays cakes to bake for a friend, parties to attend and one to throw, end of the year school functions and playing catch up around the house, you know things are out of control when you're left eating off of plastic plates because there are no clean ones and down to one pair of clean underwear because laundry is backed up the ying yang.

Sooo I'm taking a breather now and will be back tomorrow with a Giveaway, I missed registering for the one going on over at Sew Mama Sew, tomorrow ( Can't imagine how that happened)so will do one of my own, see you tomorrow with something new and Summery.

Back handed compliments

Today I was the teachers helper at Reagan's school, it is one of my favorite things to do, I really think I may have missed my calling and should have become a Pre school teacher.
As I sat down helping a group of kids do one of their projects, the little boy sitting next to me, looked up at me with his big brown eyes and said "Ms Penny, I wish you were my Grandma." *EEK* Me a Grandma, I don't look that old do I ?
In reality I think it was a compliment, his mom is moving away next week and he will be staying w/ Grandma, I think he's traumatized by the whole thing, he makes my heart ache a little.

Looking good

Ben hasn't had to REALLY dress up in at least 4 years, by dress up I mean pants other than jeans and a button down shirt as opposed to a Tshirt. Tonight marked his first ever band concert and the boys were requested to wear dress pants, ties and button down shirts. I also noted that every boy tucked his shirt in *WOW*.
Ben grumbled a bit about it all whilst getting ready, but I think he cleans up pretty darn well.

Reagan endorsed, Thai Chicken, Zucchini and Tomato Curry

When a 5 y/o who eats like a bird at dinner time, asks not only for seconds but thirds, you know you have a winner that is too good not to share.
This is definitely going into our "Favorites Folder".

Thai Chicken, Zucchini, and Tomato Curry

4 servings.

3 Tbs Vegetable oil ( I used Olive oil)
1 1/4 pounds boneless, skinless chicken breasts cut crosswise 1/3 inch thick
Salt and Freshly ground pepper
2 Zucchini ( I only used 1) cut into 2-by-1/2 inch sticks
1 1/2 C Cherry tomatoes
1 Tbs Thai red curry paste ( I used Biryani curry paste)
1/2 C unsweetened coconut milk
2 Tbs water
Finely grated zest of 1 lime
1 tbs fresh lime juice ( 2 would be better)
1/2 C chopped cilantro

1. In a large skillet, heat 2 Tbs of the oil. Add the chicken, season with salt and pepper and cook over high heat until just white throughout. 2 minutes. transfer chicken to a plate.
2.Add the remaining oil to the skillet. Add the onion and sir-fry over moderately high heat for 2 minutes. Add the Zucchini and cherry tomatoes and stir-fry for 2 minutes. Stir in the curry paste, coconut milk, water, lime zest and lime juice and bring to a simmer. Add the chicken and stir for 20 seconds. Stir in the cilantro.

Transfer to plates and serve with rice.

ENJOY !!

Need some loving ?

My friend Maria has this posted on her blog and I LOVE it, I don't know how many times I've gone over to listen to it for a pick me up in my crazy, busy life so figured I'd go ahead and post it here too, I don't think I've ever heard a song that sums up my personal views the way this one does, or heard one that makes my 5 y/o dance around like she's on speed, singing "God is love, God is love, LaLaLalala" at the top of her lungs

Prom 2009

Not technically Victoria's prom, that'll be next year but it was her friend Jess's prom, she's in a wheelchair so can't dance and was upset that she hadn't been asked,so Victoria told her that she still couldn't dance because of her knee surgery and that if she liked she would go with her.
I think they both look stunning and I know they're having a blast right now, dancing or no dancing those girls have fun wherever they go.
